Embellishment is the art of making a knife look better, without improving its functionality. (A chef's knife will not cut better with scrimshaw on the handle.)

In some cases adding a finish (like gunbluing, or a rubbed oil finish on a handle) not only improves the looks of a knife, but makes it more durable as well, limiting rust and rendering the wood of the handle somewhat waterproof.
